Camping: Pasta Fagioli… just like Olive Garden

Have you ever noticed the difference between the food at LDS Girls Camp and when guys go camping? Just because you are camping does not mean that your food cannot be flavorful and yummy. But if you do not like to cook it is hard to find good recipes for camping. Well, here is an easy one that anyone can do in a Dutch oven even though it is written for a crock pot. You can enjoy it at home or when camping.

Pasta Fagioli


2 lbs ground beef
1 onion, chopped
3 carrots, chopped
4 stalks celery, chopped
2 (28 ounce) cans diced tomatoes, undrained
1 (16 ounce) can red kidney beans, drained
1 (16 ounce) can white kidney beans, drained
3 (10 ounce) cans beef stock
3 teaspoons oregano
2 teaspoons pepper
5 teaspoons parsley
1 teaspoon Tabasco sauce (optional)
1 (20 ounce) jar spaghetti sauce
8 ounces pasta


1 Brown beef in a skillet.
2 Drain fat from beef and add to crock pot with everything except pasta.
3 Cook on low 7-8 hours or high 4-5 hours.
4 During last 30 min on high or 1 hour on low, add pasta.

In a Dutch oven:

1 Brown beef drain and set aside.
2 Add 2 tbl olive oil, onions, carrots and celery and sauté for 10-15 minutes .
3 Add beans, tomatoes, stock, seasoning and pasta and allow to simmer for 30 minutes.
4 During last 5 min add cooked beef.
